Around 1955. Don Gastón Arancibia and Doña Rebeca Garcés began the construction of what would be their home for more than 30 years.
In order to be located on the route to Valparaiso and Santiago, which at that time supported a commercial flow that provided trade in the commune, the result was a construction of high aesthetic value becoming part of the heritage history of Casablanca.
In 1988 the Donoso Vásquez Family acquired the property, at the will of Mrs. Rebeca Garcés to be its new owners, and thus began the process of restoring the gardens, halls and surroundings, to open to tourism in 2001 with the Los Álamos Tourist Complex.
Six years later, “Macerado Restaurant” opened its doors in February 2007, and has been dedicated to family cuisine and the Casablanca Origin concept for more than a decade.
In our beginnings the concept of our cuisine was: “Chilean Cuisine”, looking for recipes from all over Chile. After two years of working with this concept, we realized that all the products or producers were of local origin, so until today we define it as “Casablanca Origin Cuisine”.
Well, we decided to consolidate this concept and began to build the first “Organic Garden”.
Because Casablanca is a cold valley (hence the quality of its wines), our garden can not produce all year round, which forces us to complement with local producers.
Our philosophy is to contribute to the circular economy of the valley, seeking to show and make visible through our cuisine, the beauty of the valley, its producers, its products and its beautiful areas.
In this way, we have sought since our inception, balanced pairings with vineyards and boutique and signature wines. Expressive wines with character, always looking for the happiness of our guests.
