Gonzalo Donoso: The Man Behind Macerado Bistro and Macerado Algarrobo

Gonzalo is an entrepreneur who took the Macerado brand to the next level when he created Macerado Bistro at Casa Valle Viñamar, and consecrated the brand when he opened Macerado Algarrobo. Macerado Restaurant opened its doors in February 2007, after transforming its old family home into a restaurant, which led to it becoming a family business. Then they take the brand and the concept to Viña Mar, holding different types of events. Finally, Macerado arrives in Algarrobo, where the value proposition was to maintain the origin of family cuisine, but focused on seafood. It is there that the restaurant won its second prize for the best cuisine of the regions, awarded by the Circle of Gastronomic Chroniclers, in 2017.

Gonzalo has been able to carry the name of Macerado on his shoulders and put it in the world spotlight thanks to the concession he has in Casa Valle Viañamar, since it allows tourists who visit the vineyard to have the opportunity to try a variety of organic and sustainable gastronomy. In Macerado Bistro we can find as a distinctive aspect, being a bistro, but they have also generated initiatives around sustainability such as generating an organic garden to give a distinctive seal to the restaurant.

The gastronomic offer of Macerado Bistro Casa Valle Viñamar stands out for its high quality gourmet gastronomy, which is complemented with the products of the winery, San Pedro Tarapacá S.A. to generate the perfect pairings for each dish on the menu and an experience of the highest level for those who visit them.

“The basis of our gastronomy is made up of local produce, our organic garden, seafood and fish from Juan Fernández and Algarrobo,” says Margarita Orquera, administrator.
